First Snow, Crazy Hair, & Spinach

So it has happened. We have now had the first Snow fall of the Winter. Though I love to wake up to a Christmas morning with a fresh Snow fall, and I do love watching and occasionally playing and sledding in the snow with my kids. I really, really don't like the snow. I hate being cold, I hate shoveling and scrapping it, and I don't like it after the cars have started driving in it and it gets all dirty and muddy. So for me to have to wake up to a cold winter day,(when it's not even winter yet!) was not as good of a morning as it could have been. Whats even more sad for me is that I really love Spring and Fall and those 2 seasons keep getting skipped. Oh well, I can't change it so I might as well try and figure out how to enjoy it. I'll look for the positive. Like a fresh fallen snow is gorgeous and when my babies woke up and saw it snowing they were overcome with joy. They were giggling, yelling snow, snow, snow and had big huge smile. That can make anyone happy!
My kids are having Red Ribbon week at school ( Drug Awareness week, Say No to Drugs! ) The schools usually try to make it a fun week, by having theme days. Yesterday was crazy sock and shoe day, and today is crazy hair day. My kids love this day! They get to wear their hair however they want and no one cares. YEAH FUN!! Kelten wanted devil horns, do you think that says anything about his personality, haha! Actually overall he is a pretty ladi back kid. Love the hair though.

So if any of you don't know, my husband Todd works at the County Jail as a Corrections Nurse. They have a garden at the jail, it is one of the things the inmates can do when they have proved themselves and been on good behavior. They do the tending of the garden, it is one of the many work programs they have there. It has been nice, because we have gotten several things for little or no money. We were going to get pumpkins this year for any size $1, but a few Inmates decided that they were ticked and destroyed all of the pumpkins and Todd said there were a ton. To Bad, those were inexpensive pumpkins, we were going to get extras just so our kids could have fun carving. Carving is mucho fun in our house. Anyway, so today's find from the Jail garden was Todd bringing home a 5 Gallon bucket overloaded with Spinach. What does a person do with 5 gallons of Spinach? My kids love Spinach, it is actually the only thing we use for salads, we even eat it on our tacos. Todd and Ki like it just cooked, even straight out of the can. We all like it in things. Couscous, rice, some even in Mac and Cheese. So I think we can get through it, especially since I'm drying some and freezing some, but I was wondering if anyone has any good recipes that call for Spinach that we can try. Oh Louise, if you read this, I want to get your ziti recipe again, the one that you always make to bring to Marylous. I already know my kids like that one. So if you have some good recipes post them for me or e-mail them. We are excited to try some new things.
